  • Fresh Parsley: 2 tablespoons, chopped
  • Fresh Chives: 1.5 tablespoons, minced
  • English Muffins: 4 (white, wheat, or sourdough), split in half
  • Deli Ham: 8 slices (black forest or honey ham)

  • Hot Sauce: Optional, for serving

Optional Additions

  • Vegetables: Spinach, tomato slices, avocado, or microgreens
  • Other Cheeses: Swiss, gouda, or pepper jack

Cooking Instructions

Step 1: Prepare the Eggs

  1. In a mixing bowl, whisk together the eggs, heavy cream, parsley, chives, salt, and pepper until well combined.
  2. Stovetop Method:
    • Spray a non-stick skillet with cooking spray and heat over medium-low.
    • Pour in the egg mixture and cook while stirring gently until curds form. Shape into a square about 7 inches.
    • Cut into four portions and flip to cook the other side until just set.
  3. Oven Method:
    • Preheat your oven to 350°F (175°C). Grease a baking dish.
    • Pour in the egg mixture and bake for about 15 minutes until set. Cut into squares.

Step 2: Toast the English Muffins

  1. Set your oven broiler to low and place the English muffins on a baking sheet split side up.
  2. Toast them under the broiler until golden brown (about 1 minute). Keep an eye on them to prevent burning.

Step 3: Assemble the Sandwiches

  1. Remove muffins from the oven and spray each cut side lightly with cooking spray.
  2. On four muffin halves, place a slice of cheddar cheese.
  3. On the other four halves, layer two slices of deli ham each.
  4. Place cooked egg portions on top of the cheese halves and close with the ham halves.

Step 4: Serve

Serve immediately with hot sauce on the side if desired.
