For Boiling:

  • 4-6 Mutton trotters (paya)
  • 10-12 glasses of water
  • 4-6 garlic cloves
  • 1 tsp ginger paste
  • 1 onion, chopped
  • ¼ tsp black peppercorns
  • 1 tsp whole cloves
  • 2 bay leaves
  • 4 green cardamoms
  • 1 black cardamom

For the Gravy:

  • 1 cup ghee or oil
  • 1 large onion (made into a paste)
  • 1 tsp garlic paste
  • 1 tsp ginger paste
  • 1½ tsp red chili powder (adjust to taste)
  • 1 tsp salt (or to taste)
  • ½ tsp turmeric powder
  • 1 tsp coriander powder

For Garnishing:

  • Fresh coriander leaves, chopped
  • Ginger, julienned
  • Green chilies, sliced (optional)

Cooking Time

  • Preparation Time: 30 minutes
  • Cooking Time: Approximately 4 hours (slow-cooked) or about 90 minutes using a pressure cooker.

Instructions

  1. Clean the Trotters:
    • Scrub the mutton trotters thoroughly with whole wheat husk or salt to remove any impurities. Rinse well under running water.
  2. Boil the Trotters:
    • In a large pot, add the cleaned trotters along with water and all boiling ingredients. Bring to a boil and then reduce heat to simmer for about 4 hours until the trotters are soft and tender. If using a pressure cooker, cook for about 90 minutes.
  3. Prepare the Gravy:
    • In another heavy-bottomed pan, heat ghee or oil over medium heat. Add the onion paste and sauté until golden brown.
    • Stir in garlic and ginger paste, cooking until fragrant.
    • Add red chili powder, salt, turmeric powder, and coriander powder. Cook for another few minutes until the spices are well combined.
  4. Combine Trotters with Gravy:
    • Add the boiled trotters to the spice mixture and mix well to coat them evenly.
    • Pour in some of the broth from boiling the trotters and bring to a boil. Lower the heat and let it simmer until the gravy thickens to your desired consistency.
  5. Serve:
    • Garnish with fresh coriander leaves and julienned ginger. Serve hot with naan, roti, or rice. A squeeze of lemon adds an extra zing!
