Ingredients

  • 3 cups (375g) all-purpose flour (sifted)
  • 1 cup (225g) unsalted butter (room temperature)
  • 1½ cups (300g) granulated sugar
  • 4 large eggs (room temperature)
  • 1 cup (240ml) whole milk (or evaporated milk for extra richness)
  • 2 tsp baking powder
  • 1 tsp baking soda (optional, for extra fluffiness)
  • 1 tsp vanilla extract (or 2 tsp for more flavor)
  • ½ tsp salt (to balance sweetness)
  • ½ tsp nutmeg (optional, for that Nigerian twist!)

Instructions

    1. Preheat & Prep

  • Preheat your oven to 350°F (180°C).
  • Grease your baking pan with butter and dust with flour (or use parchment paper).

2. Cream Butter & Sugar

  • In a large bowl, beat butter and sugar together until light and fluffy (about 5-7 mins). This step is KEY for a soft cake!

3. Add Eggs & Vanilla

  • Beat in eggs, one at a time, mixing well after each addition.
  • Stir in vanilla extract.

4. Mix Dry Ingredients

  • In a separate bowl, sift flour, baking powder, baking soda, salt, and nutmeg.

5. Combine Wet & Dry Ingredients

  • Alternate adding the dry mix and milk to the butter mixture.(Start and end with flour: Flour → Milk → Flour → Milk → Flour)
  • Mix until just combinedDO NOT overmix to avoid a dense cake!

6. Bake to Perfection

  • Pour batter into the greased pan and bake for 40-50 mins.
  • Check doneness by inserting a toothpick—if it comes out clean, it’s ready!

7. Cool & Serve

  • Let the cake cool in the pan for 10 mins, then transfer to a wire rack.
