
Spicy Instant Pot Chicken Burrito Bowls – Better Than Takeout in 20 Minutes!
Perfect for busy weeknights (or lazy weekends when you really don’t feel like cooking), this recipe is a family favorite in my house. Plus, it’s healthier and cheaper than takeout! Let’s get cooking. 💃
Ingredients
- Here’s everything you’ll need:
- Main Ingredients
- 1 lb boneless, skinless chicken breasts (or thighs)
- 1 cup long-grain white rice (or brown rice*)
- 1 (15 oz) can black beans, drained & rinsed
- 1 (10 oz) can diced green chiles
- 1 cup chunky salsa (mild, medium, or hot—your choice!)
- 1 ½ cups chicken broth (low-sodium preferred)
- 1 tsp chili powder
- 1 tsp cumin
- 1 tsp garlic powder
- ½ tsp smoked paprika
- ½ tsp salt (adjust to taste)
- ½ tsp black pepper
- Toppings (Pick Your Faves!)
- Shredded cheese (cheddar or Monterey Jack)
- Fresh cilantro
- Diced avocado or guacamole
- Sour cream or Greek yogurt
- Lime wedges
- Jalapeños (for extra heat!)

Instructions
1️⃣ Season the Chicken – Pat the chicken dry, then rub with chili powder, cumin, garlic powder, smoked paprika, salt, and pepper.
2️⃣ Layer in the Instant Pot – Add rice, black beans, green chiles, salsa, and chicken broth. Stir lightly. Place the seasoned chicken on top.
3️⃣ Pressure Cook – Seal the Instant Pot and set to Manual High Pressure for 10 minutes. Let it naturally release for 5 minutes, then quick release the remaining pressure.
4️⃣ Shred the Chicken – Remove the chicken, shred with two forks, then mix it back into the pot.
5️⃣ Serve & Top – Scoop into bowls and load up with your favorite toppings (cheese, avocado, sour cream—go wild!).
Notes
- Brown rice? Increase cook time to 22 minutes with a 10-minute natural release.
- Too spicy? Use mild salsa and skip the jalapeños.
- Extra creamy? Stir in a splash of heavy cream or coconut milk at the end.
- Meal prep? Stores well in the fridge for 4 days or freeze for up to 3 months.
