Ingredients

For the Beef Marinade:
– 1 lb (450g) beef (flank steak or sirloin), thinly sliced against the grain
– 2 tablespoons soy sauce
– 1 tablespoon cornstarch
– 1 tablespoon rice wine or sherry (optional)
– 1 teaspoon sesame oil
– 1 teaspoon black pepper

For the Stir-Fry:
– 2 cups broccoli florets (fresh or frozen)
– 1 bell pepper (red or green), sliced
– 3 cloves garlic, minced
– 1-inch piece of ginger, minced
– 2 tablespoons vegetable oil (for frying)
– 2-3 tablespoons soy sauce (adjust to taste)
– 1 tablespoon oyster sauce (optional)
– 1 tablespoon chili paste or sauce (adjust for spice level)
– 1 teaspoon sugar (to balance flavors)
– 1 tablespoon sesame seeds (for garnish)
– 2 green onions, sliced (for garnish)

Cooking Instructions

1. Marinate the Beef:
– In a bowl, combine the sliced beef with soy sauce, cornstarch, rice wine (if using), sesame oil, and black pepper. Mix well and let it marinate for at least 30 minutes. This helps tenderize the meat and infuse flavor.

2. Prepare the Vegetables:
– While the beef is marinating, wash and cut the broccoli into florets. If using fresh broccoli, blanch it in boiling water for 2 minutes, then transfer it to ice water to stop the cooking process. This keeps it bright green and crisp.
– Slice the bell pepper, mince the garlic, and ginger.

3. Heat the Wok or Pan:
– Heat a large wok or skillet over medium-high heat. Add 1 tablespoon of vegetable oil and swirl to coat the pan.

4. Cook the Beef:
– Add the marinated beef in a single layer. Let it sear without stirring for about 1-2 minutes until browned. Stir-fry for another 2-3 minutes until cooked through. Remove the beef from the pan and set aside.

5. Stir-Fry the Vegetables:
– In the same pan, add the remaining tablespoon of oil. Add the minced garlic and ginger, stirring quickly to avoid burning.
– Add the broccoli and bell pepper, stir-frying for about 3-4 minutes until they are tender-crisp.

6. Combine Everything:
– Return the cooked beef to the pan. Add soy sauce, oyster sauce (if using), chili paste, and sugar. Stir well to combine all ingredients and heat through for another 2-3 minutes.

7. Garnish and Serve:
– Sprinkle with sesame seeds and sliced green onions before serving.

– For a low-carb option, serve with cauliflower rice.
