Ingredients for Cajun Bowls (Serves 5)

  • Protein:
    • 10 chicken sausage links (approximately 640g)
    • 500g shrimp, peeled and deveined
  • Vegetables:
    • 1 ½ cups roasted corn (fresh or frozen)
    • 1 bell pepper, diced
    • 1 medium onion, diced
    • 2 cups fresh spinach or kale
  • Grains:
    • 2 cups cooked white rice (or brown rice for a healthier option)
  • Cajun Seasoning:
    • 2 tbsp paprika
    • 1 tbsp garlic powder
    • 1 tbsp onion powder
    • 1 tsp cayenne pepper (adjust to taste)
    • 1 tsp dried oregano
    • Salt and pepper to taste
  • Yum Yum Sauce:
    • ½ cup mayonnaise
    • 2 tbsp ketchup
    • 1 tbsp rice vinegar
    • A dash of hot sauce (optional)

Instructions:

  4. Make the Yum Yum Sauce:
    • In a small bowl, mix together mayonnaise, ketchup, rice vinegar, and hot sauce until smooth.
  5. Assemble the Bowls:
    • Divide the cooked rice among five bowls. Top each bowl with sautéed sausage and shrimp, roasted corn mixture, and fresh spinach or kale.
    • Drizzle with Yum Yum sauce before serving.
