How to Bake the Perfect Nigerian Sponge Cake

Ingredients

- 3 cups (375g) all-purpose flour (sifted)
- 1 cup (225g) unsalted butter (room temperature)
- 1½ cups (300g) granulated sugar
- 4 large eggs (room temperature)
- 1 cup (240ml) whole milk (or evaporated milk for extra richness)
- 2 tsp baking powder
- 1 tsp baking soda (optional, for extra fluffiness)
- 1 tsp vanilla extract (or 2 tsp for more flavor)
- ½ tsp salt (to balance sweetness)
- ½ tsp nutmeg (optional, for that Nigerian twist!)

Instructions
1. Preheat & Prep
- Preheat your oven to 350°F (180°C).
- Grease your baking pan with butter and dust with flour (or use parchment paper).
2. Cream Butter & Sugar
- In a large bowl, beat butter and sugar together until light and fluffy (about 5-7 mins). This step is KEY for a soft cake!
3. Add Eggs & Vanilla
- Beat in eggs, one at a time, mixing well after each addition.
- Stir in vanilla extract.
4. Mix Dry Ingredients
- In a separate bowl, sift flour, baking powder, baking soda, salt, and nutmeg.
5. Combine Wet & Dry Ingredients
- Alternate adding the dry mix and milk to the butter mixture.(Start and end with flour: Flour → Milk → Flour → Milk → Flour)
- Mix until just combined—DO NOT overmix to avoid a dense cake!
6. Bake to Perfection
- Pour batter into the greased pan and bake for 40-50 mins.
- Check doneness by inserting a toothpick—if it comes out clean, it’s ready!
7. Cool & Serve
- Let the cake cool in the pan for 10 mins, then transfer to a wire rack.
- Slice and enjoy with a chilled drink! 🍹
