For the Korean Beef
– 1 lb lean ground beef
– 1 tbsp olive oil
– 1 onion, diced
– 3 cloves garlic, minced
– 1 tbsp grated fresh ginger
– 1/4 cup low-sodium soy sauce
– 2 tbsp brown sugar
– 1 tbsp sesame oil
– 1 tsp crushed red pepper flakes (adjust to taste)
– 1/2 tsp black pepper
– 2 green onions, sliced
For Serving
– 4 cups cooked rice (white or brown)
– 2 cups shredded cabbage or coleslaw mix
– 1 cup shredded carrots
– 1 cucumber, sliced or cut into matchsticks
– 2 eggs, fried (optional)
– Sesame seeds for garnish
– Sriracha or gochujang, for serving (optional)
Instructions
1. In a large skillet, heat the olive oil over medium-high heat. Add the ground beef and cook, breaking it up with a wooden spoon as it cooks, until browned and cooked through, about 5-7 minutes. Drain excess fat.
2. Add the onion and cook for 2-3 minutes until translucent. Add the garlic and ginger and cook for 1 minute until fragrant.
3. In a small bowl, whisk together the soy sauce, brown sugar, sesame oil, red pepper flakes and black pepper. Pour the sauce into the skillet with the beef and onions. Bring to a simmer and cook for 2-3 minutes until the sauce thickens slightly.
4. Remove from heat and stir in the sliced green onions.
5. To serve, divide the rice among bowls. Top with the Korean beef, shredded cabbage, carrots, cucumber slices and a fried egg if desired. Sprinkle with sesame seeds.
6. Serve with Sriracha or gochujang on the side for extra heat if desired.
Tips & Notes
– For a spicier dish, add more red pepper flakes or use gochujang (Korean chili paste) in place of some of the soy sauce.
– Use any combination of your favorite fresh veggies like broccoli, bell peppers, mushrooms, etc.
– Meal prep by cooking the rice and beef in advance. Assemble the bowls when ready to serve.
– Garnish with toasted sesame seeds, chopped peanuts or sliced green onions.
– Serve with kimchi or pickled vegetables on the side.
– For a low-carb option, serve the beef over cauliflower rice or in lettuce wraps.
