Marinated Greek Lamb Chops with Mushrooms and Tomatoes
Ingredients
- For the Lamb Chops:
- 1 rack of lamb (8 to 9 single rib lamb chops)
- 1/3 cup olive oil
- 4 garlic cloves, crushed
- Juice of 1 lemon (approximately 2 tablespoons)
- 2 tablespoons fresh oregano (or 1 tablespoon dried oregano)
- Salt and pepper to taste
- For the Vegetables:
- 1 cup portabella mushrooms, sliced
- 1 cup cherry tomatoes, halved
Instructions
Step 1: Marinate the Lamb Chops
- Prepare the Lamb: Pat dry the rack of lamb and slice it into individual chops, trimming excess fat if necessary.
- Make the Marinade: In a bowl, mix together olive oil, crushed garlic, lemon juice, oregano, salt, and pepper.
- Marinate: Rub the marinade onto the lamb chops thoroughly. Place them in a deep dish, cover, and refrigerate for at least 1 hour (or overnight for maximum flavor).
Step 2: Cook the Lamb Chops
- Preheat Your Pan: Heat a cast iron or stainless steel skillet over medium-high heat until very hot.
- Sear the Chops: Add a splash of olive oil to the pan. Place the marinated lamb chops in the pan and sear for about 3-4 minutes on each side until they reach your desired doneness (medium-rare is about 125°F, medium about 135°F).
- Add Vegetables: When you flip the chops to sear the other side, add sliced mushrooms to the pan. They will cook quickly; add cherry tomatoes and any remaining marinade during the last minute of cooking.
- Rest the Meat: Once cooked, remove lamb chops from the pan and let them rest for about 5-10 minutes before serving.
Step 3: Serve
Garnish with lemon slices and fresh oregano. This dish pairs beautifully with roasted potatoes, quinoa, or a fresh Greek salad.
