The best part? The marinade works magic in just 30 minutes, but if you let it sit longer? Even better.

Ingredients

  • For the Spicy Skirt Steak Marinade:
  • 1.5 lbs skirt steak (flank steak works too!)
  • ¼ cup olive oil
  • ¼ cup soy sauce (or coconut aminos for gluten-free)
  • 3 cloves garlic, minced
  • 2 tbsp lime juice (fresh is best!)
  • 1 tbsp apple cider vinegar
  • 1 tbsp honey (or brown sugar)
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • 1 tsp chili powder
  • ½ tsp cayenne pepper (adjust for spice level!)
  • ½ tsp black pepper
  • ½ tsp salt
  • For the Tacos:
  • 8-10 small corn or flour tortillas (street taco size!)
  • 1 small red onion, finely diced
  • Fresh cilantro, chopped
  • Lime wedges
  • Sliced jalapeños (optional, for extra heat!)
  • Cotija cheese or queso fresco (optional, but so good!)
  • Avocado slices or guacamole
  • Optional Sides:
  • Mexican street corn (elote)
  • Cilantro lime rice
  • Black beans

Instructions

    1️⃣ Marinate the Steak (30 mins - overnight)

  • In a bowl, whisk together olive oil, soy sauce, garlic, lime juice, vinegar, honey, and all spices.
  • Place steak in a ziplock bag or shallow dish and pour marinade over it.
  • Massage it in (yes, get handsy with it! 😆) and let it sit at least 30 mins (or overnight for maximum flavor).

2️⃣ Cook the Steak (10-15 mins)

  • Heat a grill or cast-iron skillet on high heat.
  • Remove steak from marinade (shake off excess) and cook for 3-4 mins per side for medium-rare (longer if you prefer well-done).
  • Let it rest for 5 mins before slicing against the grain (this keeps it tender!).

3️⃣ Warm Tortillas & Assemble

  • Lightly char tortillas on a dry pan or over an open flame (game-changer!).
  • Fill with sliced steak, red onion, cilantro, jalapeños, cheese, and a squeeze of lime.
  • Devour immediately!
