  • 1¼ cup (250g) Soft Brown Sugar
  • 2 tsp Ground Cinnamon
For Egg Wash:
  • 1 Egg, lightly beaten with 2 Tbsp Milk
For Sugar Glaze:
  • ½ cup (100g) Fine Granulated Sugar
  • ½ cup (100g) Water

Instructions

  1. Prepare the Dough:
    • In a small saucepan, warm the milk until it is warm to the touch but not hot. Stir in the active dry yeast and sugar, then cover and let it sit for about 10 minutes until foamy.
    • In a large mixing bowl, combine the bread flour and salt. Add the yeast mixture and eggs to the flour mixture. Mix until a dough forms.
    • Gradually add in the melted butter while kneading the dough until smooth and elastic (about 5–7 minutes).
  2. Let It Rise:
    • Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.
  3. Prepare the Filling:
    • In a medium bowl, mix together softened butter, brown sugar, and cinnamon until well combined.
  4. Shape the Knots:
    • Once risen, punch down the dough and roll it out on a floured surface into a rectangle about 14×18 inches.
    • Spread the cinnamon filling evenly over the dough.
    • Fold the dough into thirds lengthwise and cut into strips. Braid three strips together to form knots.
    • Roll each braid into a knot shape and place them into a greased muffin pan.
  5. Second Rise:
    • Cover the knots with a cloth and let them rise for another 30 minutes.
  6. Bake:
    • Preheat your oven to 375°F (190°C). Brush each knot with the egg wash.
    • Bake for 18–20 minutes or until golden brown.
  7. Make Sugar Glaze:
    • While baking, combine sugar and water in a saucepan over medium heat. Bring to a boil and then simmer until it thickens slightly.
    • Brush warm glaze over baked knots immediately after they come out of the oven.
  8. Cool & Serve:
    • Let cool on wire racks before serving.
