Prep Time: 10 minutes
Cook Time: 10 minutes
Total Time: 20 minutes

Ingredients

  • For the Thai Broccoli Rice
  • 1 head of broccoli (about 8 ounces), cut into florets
  • 1/2 head of cauliflower (optional, for added texture)
  • 1 tablespoon sesame oil
  • 1 clove garlic, minced
  • 1 teaspoon grated ginger
  • 1 teaspoon chili flakes (adjust to taste)
  • 1 teaspoon Thai mixed spice (or curry powder)
  • Salt and pepper, to taste
  • For the Stir-Fried Vegetables
  • 1 cup kale, chopped
  • 1 cup red cabbage, shredded
  • 1 cup bell peppers, sliced (any color)
  • 1 cup sugar snap peas (or any preferred stir-fry vegetables)
  • To Garnish
  • Fresh cilantro, chopped
  • Lime wedges
  • Grocery List
  • Fresh produce: broccoli, cauliflower, kale, red cabbage, bell peppers, sugar snap peas, garlic, ginger, lime
  • Condiments: sesame oil, Thai mixed spice (or curry powder), chili flakes
  • Pantry staples: salt, pepper

Instructions

  1. Prepare the Broccoli Rice:
  2. In a food processor, pulse the broccoli florets and cauliflower until they resemble rice grains. Be careful not to over-process; you want them to maintain some texture.
  3. Stir-Fry the Vegetables:
  4. Heat the sesame oil in a large frying pan or wok over medium heat.
  5. Add the minced garlic and grated ginger; sauté for about 1 minute until fragrant.
  6. Stir in the chili flakes and add your choice of vegetables (kale, red cabbage, bell peppers, and sugar snap peas). Cook for 3–4 minutes until they are slightly tender but still vibrant.
  7. Combine and Season:
  8. Add the broccoli rice to the pan along with the Thai mixed spice. Stir well to combine everything and cook for an additional 3–4 minutes until heated through.
  9. Season with salt and pepper to taste.
  10. Serve:
  11. Transfer the mixture to a serving bowl or individual plates. Garnish with fresh cilantro and lime wedges for an extra burst of flavor.
