Let me share 3 of my go-to vegan lunch recipes that helped me lose weight without losing joy.

1. Vegan Jollof Rice with Veggies (320 kcal)

Ingredients:
• 1 cup cauliflower rice or ½ cup basmati rice
• 1 red bell pepper
• ¼ cup chopped carrots
• ¼ cup green peas
• ¼ onion
• 1 tbsp tomato paste
• 1 tsp coconut oil
• Seasoning: curry, thyme, paprika, salt, Maggi

Grocery List:
• Cauliflower or basmati rice, bell pepper, carrots, onion, tomato paste, coconut oil, peas, spices

Cooking Time: 25 mins

Prep Time: 10 mins

Instructions:
1. If using cauliflower, pulse into rice-like texture. If using basmati, rinse and parboil.
2. Blend pepper + tomato paste into a smooth base.
3. Heat oil, sauté onions, add blend + spices.
4. Add rice + veggies, stir, cook covered for 10–15 minutes.

Nutrition Info (Cauliflower version):
• Calories: 320
• Protein: 6g
• Carbs: 28g
• Fat: 12g

Tip: Add fresh herbs (like scent leaf or basil) for extra flavor without calories.

2. Spicy Vegan Efo Riro with Tofu (350 kcal)

Ingredients:
• 1 bunch spinach (or ugu)
• 1 small red bell pepper
• 1 medium tomato
• 1 tsp palm oil
• ½ onion
• Seasoning: dry pepper, crayfish substitute, salt
• ½ cup firm tofu (cubed + grilled)

Grocery List:
• Spinach, bell pepper, tomato, tofu, palm oil, onion, spices

Cooking Time: 20 mins

Prep Time: 10 mins

Instructions:
1. Blend pepper, tomato, onion into sauce.
2. In a pot, heat palm oil and fry sauce with spices.
3. Add chopped spinach, let simmer.
4. Grill tofu with dry pepper and salt. Serve with stew.

• Calories: 350
• Protein: 14g
• Carbs: 18g
• Fat: 20g

Tip: Pair with oat swallow or plantain fufu for a balanced vegan meal.

3. Moi Moi in Silicone Cups (No Egg, 300 kcal)

Ingredients:
• 1 cup peeled beans
• 1 small red bell pepper
• ¼ onion
• 1 tsp oil
• Spices: crayfish (or skip), Maggi, salt

Grocery List:
• Beans, red bell pepper, onion, oil, seasonings

Cooking Time: 40 mins

Prep Time: 15 mins

Instructions:
1. Blend beans, pepper, onion, seasoning + small water.
2. Add oil and stir.
3. Pour into silicone muffin cups or ramekins.
4. Steam or air fry at 350°F for 20–25 mins.

Nutrition Info:
• Calories: 300
• Protein: 10g
• Carbs: 24g
• Fat: 10g

Tip: Freeze leftover moi moi for quick weekday lunches.
